What Is Monosodium Glutamate with Cas 32221-81-1?
Monosodium glutamate is white prismatic crystal or crystalline powder, odorless, with special meat flavor. The relative density is 1.635, the melting point is 195 ℃, and the filling specific volume is 1.20. It is easily soluble in water, and the pH of 5% aqueous solution is 6.7-7.2. It is difficult to dissolve in ethanol and ether. Without moisture absorption, the crystal water starts to be lost at 120 ℃, and the intramolecular dehydration starts at 150-160 ℃ to form sodium pyroglutamine, which loses its fresh taste. It begins to decompose into pyrrole at about 270 ℃.
