Ferrous gluconate is a yellow gray or light yellow green crystalline particle or powder with a slight caramel odor. Soluble in water, 5% aqueous solution is acidic and almost insoluble in ethanol, with a theoretical iron content of 12%. Ferrous gluconate is easily absorbed, has no stimulation or side effects on the digestive system, and has no impact on the sensory performance and flavor of food.
