L-Aspartic acid appears as white crystals or crystalline powder with a slightly acidic taste. Dissolved in boiling water, slightly soluble in water (0.5%) at 25 ℃, easily soluble in dilute acid and sodium hydroxide solutions, insoluble in ethanol and ether, decomposed at 270 ℃, with an isoelectric point of 2.77.
