Glutathion (GSH) ist ein Tripeptid (γ-glutamylcysteinylglycine) weit verbreitet in Pflanzen und Tieren. GSH dient als nukleophile co-Substrat für Glutathion-methyltransferasen in der Entgiftung von Xenobiotika und ist ein essentieller Elektronen-donor zu glutathione peroxidases in der Reduktion des hydroperoxides. GSH ist auch daran beteiligt, Aminosäure-transport und Instandhaltung von protein-sulfhydryl-Reduktion status. Die Konzentration von GSH reicht von ein paar micromolar im plasma auf mehrere millimolar in Geweben wie der Leber.
